BLT Pasta Salad

BLT Pasta Salad is one of my favorite summer pasta salads. How could one go wrong changing a BLT into a salad?

This is one of my favorite summer pasta salads.

BLT Pasta Salad

  • 1 pound bacon, cooked, drained,  & cooled
  • 1 pound pasta, cooked, drained, and cooled
  • 1 medium yellow onion, diced (or a few chopped green onions)
  • 1 1/2 cups mayonnaise
  • 2 Romas or 1 large tomato, diced
  • Sea salt
  • Coarse ground pepper
  • 1 head romaine lettuce, chopped
  • About 10 cherry or grape tomatoes for garnish

Chop bacon and set aside. Place pasta, onion, mayonnaise, diced tomatoes, salt & pepper in a large bowl. Add most of the bacon bits and stir well. Save some bacon for a garnish. Place romaine lettuce on the salad plate and top with pasta salad.

Top with some cherry tomatoes and some bacon bits if you like.

If possible, extra pasta salad should be stored separately from lettuce so lettuce stays nice & crisp for future use.
