My guests tonight are my son and his buddies. They have such a rough life… playing video games in front of the 60-inch flat-screen to celebrate my son’s birthday.  Of course, they get perks that no one else gets, like requesting homemade french fries at the last minute. I’m such a pushover.

Here’s how you can make heavenly fries at home.

Makes 4-6 servings.

  • 1 gallon vegetable or peanut oil
  • 4 russet potatoes
  • Sea salt

Scrub and rinse the potatoes well. You do not need to peel them but you can if you’d like. Cut potatoes into a French fry cut (a mandolin works perfectly for this). Place them in a large bowl of cold water for about 30 minutes. Drain the potatoes and place them on a paper towel-lined tray to drain and use more paper towels to pat the fries until they are very dry.

Pour the oil into the deep fryer and turn it on to 375°F degrees. Wait for the deep fryer to preheat before cooking. This is very, very important. If you do not preheat, you will have soggy, greasy potatoes. Ain’t nobody got time for that.

Once it the oil has come to the correct temperature, carefully place a handful of potatoes in the oil for about three minutes to blanch them. A slotted spoon works well for this. Don’t put too many potatoes in the fryer at one time. If you do, your oil will cool down too much and the fries won’t cook properly. Do not use the lid on the fryer.

Remove them from the fryer and allow them to cool on a paper towel-lined baking sheet. 

After they have cooled, place them back into the deep fryer again and cook for about 5 more minutes or until golden brown. Place back onto the baking sheet when done and lightly coat with sea salt right away.

Oh, yes, and a side of ranch dressing at no extra charge.
