Blueberry Smoothies Recipe

There are few things on this planet as satisfying as blueberry smoothies. They’re healthy, refreshing, speedy to make, and yummy!

best blueberry smoothies

Blueberry Smoothies Ingredients

  • 2 cups frozen blueberries
  • 1/2 frozen banana
  • 1 1/4 cups apple juice
  • Small handful of fresh, clean spinach (optional)

Place ingredients in the blender. Secure lid. Begin blending on medium-low speed and tamper and increase speed as needed until banana has blended completely and smoothies are nearly smooth. It is nice to have a bit of texture, but you will want them to be smooth enough to go through a straw.

These babies are the perfect summer replacement for that evening ice cream you love but ultimately regret. And I do love my ice cream so you know these must be good.

Dark Cocoa Mix Recipe

Because sometimes while you enjoy the childlike wonder of winter, you just want your hot chocolate to be a little more grown up.

  • 3/4 cups dark cocoa powder
  • 3/4 cup nondairy creamer
  • 3/4 cup powdered milk
  • 1 pound powdered sugar
  • 1/2 teaspoon sea salt

Place mix ingredients in a medium bowl. Stir well. Although not needed, it is a good idea to put mix through a sifter to remove lumps.

To use, place 1/2 cup of cocoa mix in a large cup. Add 1 1/2 to 2 cups of boiling hot water (to your liking). Stir until dissolved.

My favorite way to heat water is now my flip-top electric teapot. My favorite way to enjoy hot chocolate is with homemade flavored whoop cream on top… or maybe with a few high-quality chocolate pieces stirred in. Move over, marshmallows.

French Press Coffee Tray With Chocolate & Whipped Cream Toppings

When one goes to a fancy schmancy place, one feels fancy schmancy… that is, unless one doesn’t realize the appropriate attire for the Nutcracker at the Pacific Northwest Ballet is semi-formal and one arrives in jeans. Then one does not feel so fancy shmancy. But, that is a story for another day. Or, you know, never.

One such fancy shmancy restaurant I’ve enjoyed serves their coffee with cream, and sugar… and chocolate, and white chocolate, and (as I like to call it) whoop cream.

For a girl who has always enjoyed her cheap, bitter coffee with a dose of hot water and her pricey, bold coffee black, I was overjoyed at the new, fanciful options.

Shaved semi-sweet or Belgian chocolate .

Chocolate Striped Mikado Sticks. You know, just because you can.

Glorious whoop cream enhanced with a little powdered sugar and almond emulsion. Or, if you prefer, vanilla . Or maple. Or mint. Brunch for a crowd? Offer some of each.

White chocolate curls? Yes, please!

Fancy shmancy places eat your heart out.

If anyone needs me, I’ll be right here. Feeling fancy shmancy. In my jeans.

Fuzzy Navel With Fresh Ginger Recipe

It is a beautiful thing when girls get together to celebrate the happy happenings of one of their own. Today was my new dotter-in-law’s bridal shower – a celebration filled with joy and pretty treats and naughty gifts and laughter and joy. It’s even more fun when there’s yummy food and marquee letters. And heart banners made with love. And fuzzy navels.

fuzzy navel recipe

Fuzzy Navel With Fresh Ginger

  • 1 cup vodka
  • 1 cup peach schnapps (the fuzzy)
  • 4 cups fresh orange juice (the navel)
  • About 1 tablespoon minced ginger (just peel & grate with Microplane fine grater)

Place all ingredients into a large pitcher. Stir well. Shake with ice if desired.

Makes 6  8-ounce glasses but when shared in mini mason jar shooters, they’re even more delicious. Just ask the girls.

Mint Mojito Cocktail Recipe

The most refreshing drink in all the cocktail kingdom is the mint mojito. She is light, beautiful, and more daring than she appears. If your mint has taken over your garden space like mine has, it is time to entertain your neighbors with mojitos. And fast.

mint mojito

Mint Mojito Ingredients

  • 3/4 cup sugar
  • 3/4 cup fresh lime juice (this may take about 4 limes)
  • 3/4 cup club soda, chilled
  • 1 1/2 cups rum
  • Leaves from about 12 sprigs of mint
  • 4 cups crushed ice

Place sugar, lime juice, club soda, and rum into a pitcher and stir. Add mint leaves. Using a wooden spoon, press into mint leaves so that you can mull them into your drink. A couple of minutes should do the trick. You don’t want to press them too much as they would turn bitter. Stir in crushed ice.

Divide mojito into 4 – 12 ounce glasses.

You shall soon find yourself lacking enough mint to go around; yet, somehow, you will have an overwhelming number of new, minty-fresh neighborhood friends. You’re welcome.

Bloody Mary Cocktail Recipe

Of all the outlandish, hilarious, and awesome names of cocktails, the one that bothers me the most is my very favorite drink… the Bloody Mary. You know what. We’ll just call her Mary. After trying Marys out in various locations, I have found one common ingredient which makes or breaks my Mary. It’s dill pickle juice.

I admit, I was one of those kids who drank the pickle juice right out of the jar after making my peanut butter and pickle sandwich. While I’m at it, I might as well admit I dipped those seventies crispy breadsticks into butter just so I could eat the butter. Now, before I rat out too many more of my own secrets, here’s Mary…

  • 3 oz. vodka (or Bakon Vodka)
  • 6 oz. V8
  • Juice of 1/2 fresh lemon
  • 5 oz. dill pickle juice
  • 5 drops Worcestershire sauce
  • 5 drops Tabasco sauce (more or less is fine)
  • 1/4 teaspoon horse radish
  • 1/8 teaspoon Beau Monde seasoning
  • Dash of freshly ground pepper
  • Dash of lemon pepper
  • Sea salt to taste

You can shake ingredients together in a shaker with ice then strain Bloody Mary into a 16 oz. glass or stir in a pitcher then pour over ice in 20 oz. glass. Garnish with pickle, lemon & lime wedge, and / or a celery stalk. If you use Bakon Vodka, you can top with a few bacon bits. You can always vary the ingredient amounts to your liking.

Okay. Okay. I drank the olive juice out of the olive can too.

And I accidentally followed my grandpa into the men’s restroom once when I was six and my grandma teased me about it our entire week-long road trip to Yellowstone Park.

Annnnnd that’s all you’re getting out of me today. Unless I have another Mary. or two.

Limoncello White Chocolate Cocktail

My friends on the east coast are shoveling snow while I’m over here in the Northwest with my door open to let the sunshine pour inside. This calls for a drink that brings us all together. IMG_0146

Makes about 4 servings.

  • 2 cups heavy cream
  • 1 cup grated or finely chopped white chocolate
  • 1 cup limoncello (can use store bought or make your own in a few days time)
  • Whoop Cream (May I recommend the almond flavored whoop cream?)
  • Chopped almonds

In a double boiler (or a sturdy glass bowl that fits over a saucepan), place a little water in bottom pan. Place top pan over it. Heat slowly over medium heat. Pour heavy cream into pan and begin to heat. Whisk often to prevent burning. Add white chocolate and continue to whisk. Continue until white chocolate is fully melted.

Whisk in limoncello. Pour into mugs and top with whoop cream then chopped almonds.

Ahhhhh. I know, right? Winter and summer come together to create this dreamy springy cup of comfort. Bright and lemon-y yet cozy and comforting. Perfect to serve right before the sun goes down over your Seattle patio or while sitting in front of your fireplace in Boston this weekend.

Baileys Irish Cream Iced Coffee

  • 4 ounces Baileys Irish Cream
  • 8 ounces quality coffee
  • 1 ounce Irish Whiskey
  • Ice (optional)
  • Baileys whoop cream
  • 2 fresh clovers
Brew coffee and stir together with irish cream & whiskey for a loverly hot drink.
For a chilled coffee, place Irish cream, coffee, and whiskey in a shaker with ice. Shake well and strain ice while pouring into two glasses. If you don’t have a cocktail shaker, just stir ice into drink until cold then strain ice so it doesn’t melt into your drink and water-down your coffee cocktail.
To make whoop whoop cream, just pour 2 cups of heavy whipping cream into a very clean mixing bowl. Whip until there are stiff peaks, then add 1/4 cup powdered sugar and a tablespoon of Baileys Irish Cream or teaspoon of vanilla. Whip a little bit more. Place a dollop on each drink. Decorate with a fresh clover on top if you’re feeling particularly Irish today or any day.

Peach Bellini Recipe

Summery goodness has arrived. We’re bringing my favorite blended cocktail home for you to enjoy on your own deck. Simply peachy.

Screen Shot 2015-06-09 at 12.26.00 PM

  • 1 1/2 cups ice cubes
  • 1 cup water
  • 1 sixteen ounce bag of frozen peach slices
  • 1 cup sugar
  • 1/4 cup vodka
  • 1 cup peach schnapps
  • Grenadine (pomegranate syrup found in mixers section at grocer) or raspberry syrup

Place ice cubes in blender. When you are ready to blend, pour water over ice and blend until ice becomes slushy. If it doesn’t become slushy, just add a bit more water until it is.

Drain excess water off of slushy ice.

Add frozen peaches, sugar, vodka, and peach schnapps into blender and blend on lowest speed that works until nice, slushy texture. Taste test to be sure the amount of alcohol is right for you.

Divide into about 4 fun glasses. Pour a bit of grenadine syrup over tops of bellinis for a fun peachy look.

Serve with straws or spoons. Always share with friends.
