Parisian Hot Chocolate

Makes about 4 six-ounce servings.

  • 2 cups whole milk
  • 1 teaspoons vanilla
  • 10 ounces 65-70% chocolate (I recommend Valrhona Chocolate Guanaja 70%), broken or chopped into small pieces
  • Dash of flaky salt (optional)
  • One recipe Whipped Cream (optional)

Pour the milk in a double boiler. Whisk until hot over medium heat.

Break or rough chop the chocolate up into small pieces. As soon as the milk is hot, add the broken or chopped chocolate pieces and vanilla. Whisk until chocolate has fully melted and you have a velvety chocolate.

Pour the chocolate into your prettiest small cups or your coziest mugs. If you like, top with a little bit of flaky salt. Make some homemade whipped cream because this chocolate deserves the real thing.
