Watermelon Radish Salad is as healthy as it is gorgeous!

Watermelon Radish Salad

Watermelon Radish Salad

  • 2 watermelon radishes
  • 2 English cucumbers
  • 1 shallot
  • 1 recipe Asian Vinegerette
  • 8 ounces fresh sugar snap peas
  • A handful of fresh microgreens (preferably ones that are sporting the same colors in this salad)

Cut off the ends and then rough peel the radishes.

Place the radishes and the cucumbers through the food processor using the slicing attachment.

Trim the ends off the shallot and either place it through the food processor too or slice it with a knife.

Place the sliced radishes, cucumbers, and shallots in a bowl and set aside.

Make the Asian Vinegerette and set it aside too.

Split the pea shells in half along the seams. Try to keep all the peas inside to one side of the shell for the prettiest presentation.

Keep everything cold and separate until right before are ready to serve your salad.

Drizzle and coat the salad with the vinaigrette and then place it on a simple platter or plates.

Top with some microgreens and arrange the sugar snap peas to your liking.

This salad will be sure to peas everyone. Soak in the ooos and ahhhs as you serve your guests.
