Remove the butter from the refrigerator and let it sit out so it can soften to room temperature.

Press half a cup into one side of the mold. While doing this, check the other side of the mold to be sure there are no air pockets. Level off the top with a cake spatula or a butter knife. Use the other half cup of butter to do this with the second side of the mold. Level off again.

Set the extra butter aside in a dish on the counter so it stays soft.

Place the filled turkey molds into the freezer so they can firm up for at least an hour.

When the butter is frozen, pop the turkey halves out of the mold.

Use the excess butter to secure the two halves of the turkey together. Voila!

Wrap your turkey in plastic wrap right away and pop him in the refrigerator until the day of your gathering. Remove him from the fridge a couple of hours before serving. Don’t worry. He will stay intact but will soften so your guests can easily enjoy the butter… because, well, butter.
