Smoked Salmon & Gruyere Grilled Cheese Sandwich

  • 3/4 cup balsamic vinegar
  • 1/4 cup maple syrup (pure maple syrup is best) or honey
  • 4 slices multigrain bread
  • 4-6 tablespoons butter
  • 2 slices gruyere cheese
  • 6 ounces smoked salmon
  • 1 cup fresh sprouts or lettuce
  • 1 fresh pear, sliced
  • ½ cup blueberries, optional

To make the balsamic glaze, place balsamic and maple syrup in a saucepan over medium heat. Once it starts to boil, reduce heat to medium-low and simmer for about 10 minutes or until glaze reduces to half the amount. Set aside to cool. Any extra glaze does not have to be refrigerated. Glaze can be used for savory foods and desserts.

Preheat frying pan to medium heat. Lightly butter both sides of each of the four slices of multi-grain bread.

When the pan reaches the desired temperature, place the slices into the pan. Let cook for a few minutes until the bottom of the bread slices are light golden brown.

Use a spatula to flip the slices over. Place the cheese on each of the four slices of bread. Place a lid over the pan while the second side cooks for a few minutes to help the cheese melt. Cook all slices until the second sides are light golden brown.

Remove slices from the frying pan and turn off the stovetop.

Layer the remaining ingredients on two slices of the slices of bread, drizzle with balsamic glaze,  then top with each with the remaining two slices of bread.
