Baja Fresh Burger With Garden Veggie Relish. You’ll love the confetti on this burger. The Garden Veggie Relish is everything. Well, and the two kinds of spicy cheese. And the zesty Southwest Rub. And, well, I digress, you are gonna love this sassy burger.

Baja Fresh Burger With Fresh Veggie Relish

  • 16 ounces ground hamburger
  • 1 recipe Southwest Rub 
  • 1/2 cup (or one stick) butter, softened
  • 1/2 bunch cilantro (break off & discard excess stems), chopped fine
  • 1/2 teaspoon sea salt
  • 8 slices artisan white bread
  • 4 slices pepper jack cheese
  • 4 slices chipotle cheddar cheese
  • 1 recipe Green Chili Sauce (below)
  • 1 recipe Fresh Garden Relish (below)
  • 4 romaine lettuce leaves

Place southwest rub in a medium bowl with ground hamburger and mix until rub is mixed in well. Break hamburger into 4 equal 4-ounce pieces. Form into patties. Fry in a frying pan over medium to medium-high heat. Cook on both sides until the middle of the burgers reach 160°F with a meat thermometer. Remove from heat and set aside to rest.

Whip butter, cilantro, and salt in a bowl and whip together well to make cilantro butter.

Spread cilantro butter lightly on one side of each of all 8 slices of bread and place butter side up on a baking sheet. Toast under the broiler until golden brown. It’s smart to keep the oven door a little bit open so you can watch them closely.

When the butter side of bread slices are light golden brown, flip them over and place pepper jack cheese on 4 slices and chipotle cheddar on the other 4 slices. Place back under broiler until cheese is nice and melty. Remove from the oven.

Place a piece of romaine lettuce and then a burger patty on each of the chipotle cheddar slices of bread. Top with Green Chili Sauce and then Garden Fresh Relish. And, finally, top each sandwich with bread slices with the pepper jack cheese on them.

Garden Veggie Relish

  • 1/2 red bell peppers, fine diced
  • 1/2 orange bell pepper, find dices
  • 1 ear of yellow sweet corn, removed from the cob
  • 7 ounces black beans, drained and rinsed
  • 1 fresh jalapeno, fine diced
  • 1/2 cup red onion, fine diced
  • 1/2 bunch cilantro, chopped fine
  • Dash of sea salt
  • Dash of coarse ground pepper

Stir together all ingredients.

Green Chili Sauce

  • 1/2 cup sour cream
  • 1 -4 ounce can mild green chilis
  • 1 clove garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon fresh lime juice
  • Dash sea salt & freshly ground pepper

For a cool, refreshing sauce to balance out the heat of the chipotle peppers, we make mild green chili sauce.  Stir mild green chiles, minced garlic, cumin, lime juice into sour cream. Add salt and pepper to taste.
