Asian Broccoli Salad

While there are plenty of unhealthy Asian dishes here in America, this fresh & crispy Asian Broccoli Salad Recipe is a great way to enjoy Asian flavors without the high calories.

Or, you know, alongside the high-calorie Chinese take-out.

Asian Broccoli Salad

  • 1 pound fresh broccoli, chopped
  • 4 ounces red cabbage, chopped
  • 2 carrots, grated
  • 1 cup dried cranberries (replace with raspberries for Keto or Paleo option)
  • 1 cup slivered almonds
  • 1/2 pound cooked chicken breast, diced (optional)
  • 1 recipe Asian Vinegarette dressing (recipe below)

Toss all ingredients and dressing together.

A fresh and delightful treat as a side salad or main dish.

Asian Vinegarette Dressing

  • 5 tablespoons red wine vinegar
  • 1/2 cup sugar (use Swerve or another Keto-friendly option for Keto or Paleo)
  • 1 teaspoon sesame oil
  • 2 tablespoons soy sauce
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon coarse pepper

Place all ingredients in a jar with a lid and shake until emulsified.

Drizzle dressing over salad and toss until salad is well coated.
