Dear friend, Have you met my friend, Spicy Dutch Speculaas Cookie? You surely must.

Spicy Dutch Speculaas Cookie

Speculaas. She is spicy and sassy and exceptionally gorgeous.

Spicy Dutch Speculaas Cookie

Cream together

  • 1 1/2 cups butter
  • 1 1/2 cups brown sugar

Add remaining ingredients and mix together well:

  • 1 1/2 teaspoon salt
  • 1 egg
  • 1/2 teaspoon baking powder
  • 3 1/2 cups flour
  • 2 tablespoons speculaaskruiden

Cover the dough with plastic wrap and refrigerate for about an hour.

After chilled, roll out onto a floured surface. Preheat oven to 350F.

Roll with a regular rolling pin to about 1/4 inch thick, then roll over with a speculaas rolling pin if you like.

Then using cookie cutters cut out basic shapes.

Squares, perhaps? I think yes.

Bake cookies for about 15-20 minutes.

I could roll and roll and roll… happy girl.

The recipe makes about 2 dozen gorgeous spicy cookies.
