Scandinavian Salad

Dill Salad Dressing

  • 1/2 cup  sour cream
  • 3/4 cup buttermilk
  • Zest and 1 tablespoon of juice from one fresh lemon
  • 1 package fresh dill, chopped or processed
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon coarse ground pepper

Salad

  • 5 ounces romaine lettuce, spring lettuce, or your favorite chopped salad greens
  • 1 English cucumber, thin sliced
  • 1/2 red onion, thin sliced
  • 8 ounces smoked salmon, chopped
  • About 2 ounces non-pareil capers, drained (or, if you prefer, English peas)

Place the sour cream, buttermilk, lemon zest, lemon juice, dill, salt, and pepper in a medium-sized bowl. Whisk together and set aside.

Place lettuce onto a platter or divide it onto plates. Drizzle with the salad dressing.

Top with cucumber slices, sliced onions, salmon, and capers.
