Red Velvet Cupcakes With Cream Cheese Frosting

Red Velvet Cupcakes With Cream Cheese Frosting

Makes 24 cupcakes.

  • 1 recipe Red Velvet Cake
  • 1 recipe Cream Cheese Frosting
  • 2 dozen candy hearts, optional

Red Velvet Cake

Preheat oven to 350°F.

  • 2 cups sugar
  • 3 cups flour
  • 2 tablespoons cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoon sea salt
  • 2 eggs
  • 1 1/4 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon vanilla
  • 1 ounce red Wilton food coloring
  • 1 cup hot water

Place the dry ingredients in an electric mixer bowl and, using the whisk attachment, whisk everything together.

Place eggs, buttermilk, butter, & vanilla, and food coloring in a medium bowl and whisk together until the eggs are well beaten. Turn the mixer on. Pour the wet ingredients into the dry mixture.

With the mixer still on, slowly add the hot water. Turn the mixer off and use a rubber spatula to scrape ingredients from the sides of the bowl down into the batter as needed

Mix just until everything has come together to make a nice batter.

Scoop batter using an ice cream scoop into cupcake liners placed in a muffin baking pan. Bake for about 20-25 minutes or until a fork poked in comes out clean. Allow cupcakes to cool completely.

This recipe will make 12 extra-large cupcakes or about 60 mini cupcakes if you’d rather. Minis only take about 11 minutes to bake.

Cream Cheese Frosting

  • 8 ounces cream cheese
  • 8 ounces unsalted butter
  • 1 1/2 teaspoons sea salt
  • 2 pounds powdered sugar
  • 1 teaspoon fresh lemon juice

Mix cream cheese, butter, and salt together on a high setting until they’re light & fluffy. This might take a couple of minutes. Add powdered sugar and mix on the lowest setting so it doesn’t fly out of the bowl. Add lemon juice. Turn up speed and whip for a couple more minutes.
