Pumpkin Bread

Pumpkin bread is a classic favorite and a perfect treat for when the leaves start turning yellow, orange, and red. Are you ready, pumpkin’? Okay then. Let’s get started.

Pumpkin Bread

Pre-heat oven to 350°F degrees.

  • 1 stick unsalted butter, melted
  • 1 1/4 cup firmly packed dark brown sugar
  • 2 eggs, lightly beaten
  • 1 cup pumpkin puree (canned or you can make your own)
  • 1 3/4 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1/2 teaspoon freshly grated nutmeg
  • 1 teaspoon allspice
  • 1 tablespoon ground cinnamon
  • 3/4 cup pecans, chopped (optional)
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup powdered sugar for sprinkling (optional)

Spray baking spray into a bread pan. Place butter & sugar into the mixing bowl. Beat together. Add wet ingredients into mixer & blend. Add dry ingredients & mix until combined. Stir in pecans & chocolate chips. Pour into the bread pan and set aside. Bake about 40-45 minutes or until a knife poked into the middle comes out clean.

Today, she expresses these loves creatively through speaking engagements and food writing. Deanna hosted guests, including celebrities, at her award-winning B&B in the Snoqualmie Valley. Deanna has been seen on both local and national television with her Saucy Balsamic Burgers which knocked 'N Sync's Joey Fatone to his knees. Besides her children, Deanna’s mud pie is one of the most beautiful things she has ever created.
