Mini Pecan Pies

Mini Pecan Pies. One of the most beloved pies of all time… the Pecan Pie.

Pecan Pie

Makes 12 mini pecan pies or 1 large pie.

Preheat oven to 400°F.

  • 1 recipe Basic Pie Crust
  • 3 eggs
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 1 cup light corn syrup
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 tablespoons unsalted butter, melted
  • 1 1/2 cups pecans

Line one pie pan with the pie crust. Pinch the top of the pie crust all the way around to create a pretty edge.

Whisk together eggs, brown sugar, sugar, corn syrup, salt, vanilla, and melted butter. Stir pecans into filling.

Pour pie filling into pie crust & bake for 15 minutes. Reduce the heat to 350°F and bake for 30 more minutes.

For mini pecan pies, bake at 350°F for about 35 minutes.
