Peanut Butter Cookies

I often forget about peanut butter cookies… so plain, so ordinary.

But, then I have a hot-out-of-the-oven peanut butter cookie again; and, oh, the joy that fills my soul.

Peanut Butter Cookies

Makes about 18 cookies.

Preheat oven to 350°F.

  • 1/2 cup sugar (plus more for stamping cookies)
  • 1/2 cup brown sugar
  • 3/4 cup peanut butter
  • 1/2 cup unsalted butter
  • 1 egg
  • 3/4 teaspoon baking powder
  • 1 teaspoon sea salt
  • 1 1/4 cup flour

Cream sugar, brown sugar, and butter together. Add remaining ingredients and mix until combined.

Using small cookie scoop, place balls of dough on a baking sheet covered with parchment paper. Leave a few inches in between each dough ball.

Dip a fork in sugar and then stamp down on each cookie twice, making the shape of a cross.

Bake for about 10-12 minutes.
