  • 4 cups canola, peanut, or vegetable oil (for frying)
  • 4 sweet onions
  • 1 cup flour
  • 1/3 cup cornstarch
  • 1 tablespoon sugar
  • 1/2 teaspoon sea salt, plus more for sprinkling
  • 10 oz bottle club soda

Preheat oil for frying in a small deep fryer to 375°F. If you’d rather, you can heat it in a heavy-duty pan and use a thermometer. Do not start frying your onion rings until the oil is preheated or they will become heavy, soggy, and greasy.

Peel and then slice the onions into rings. Set aside.

Line a baking sheet with a few layers of paper towels to rest your fried items on so excess oil will drain onto the paper towels.

Place dry ingredients in a medium-large bowl and whisk until well combined.

Pour the club soda into the dry ingredients. Gently whisk together just until combined. The batter should still be lumpy. Don’t overmix. Allow tempura mixture to sit while oil finishes heating up.

When frying oil reaches 375°F, use tongs to dip and coat a slice of onion with the tempura batter and carefully place it into the fryer. Repeat this process with a few more onion slices. Don’t crowd the fryer because if you do, your onion rings will stick together and will cool down your oil too much. The oil that has cooled down too much will make for soggy breading rather than a lovely crunchy coating.

Cook for a few minutes on each side. Use a utensil that’s safe in hot oil to safely remove the onion rings from the fryer, like a stainless steel slotted spoon. The coating should be a beautiful golden brown. Place them on the baking sheet and sprinkle with sea salt right away.
