No Bake Coconut Date Ball Cookies

You’d think most kids might run if you were to mention coconut and walnuts in the same No Bake Coconut Date Ball Cookies; but, when I was little, this was my favorite holiday cookie.

I still love making them today because they are as yummy as I remember and easy too!

No-Bake Coconut Date Ball Cookies

  • 2 cups dates, pitted & diced (dried are fine)
  • 2 cups mini marshmallows
  • 1 cup walnuts, chopped
  • 12 whole graham crackers, crumbled or 2 cups graham cracker crumbs
  • 1 14-ounce can sweetened condensed milk.
  • 1 14-ounce bag sweetened, shredded coconut

Place dates, marshmallows, walnuts, crackers, and condensed milk into a large bowl and stir until everything is coated with the condensed milk. It might be easier to finish mixing together with your hands after a while of stirring.

Roll mixture into about 1-inch balls.

Roll each date ball into the coconut until well-coated. They look like adorable little snowballs.

For a gluten-free option, just find some plain, sweet cookies with a gluten-free label or some almond flour instead of graham crackers.
