Mini Baked Potato Appetizers

These Mini Baked Potato Appetizers might as well be called happytizers…

… cuz they’re gonna make your gang oh-so-happy.

Mini Baked Potato Appetizers

Preheat oven to 450°F.

  • 1.5 pounds petite potatoes
  • 3 tablespoons olive or grapeseed oil
  • 2 ounces unsalted butter, softened
  • 6 cloves fresh garlic, minced
  • Dash of salt
  • 3/4 cup sour cream
  • About 6 ounces white cheddar cheese, cut into small rectangles
  • Small bunch of fresh chives, chopped small
  • 3/4 cup small bacon bits
  • Flaky salt, optional

Coat potatoes in olive oil and then wrap them in a sheet of foil and place them on a baking sheet. Bake them in the oven for 45 minutes to an hour or until they are very soft & tender.

While the potatoes bake, stir together the butter, garlic, and a dash of salt. Place in a decorating bag or Ziploc bag with one of the corners cut off. Place the sour cream in a bag as well. Get remaining toppings ready to go.

Remove cooked potatoes from the oven, Carefully unwrap the foil and slice each one about 2/3 of the way through as you would with a large baked potato. Place each potato in a small paper or foil muffin liner.

Squeeze some garlic butter in each potato, then some sour cream.

Place a piece of cheese on each one so it looks like a little pat of butter. Top with chives, bacon bits, and (if desired) flaky salt. Serve with a little napkin since these delightful, little appys can be a bit messy – but well worth the trouble.
