Meatloaf Sandwich

And this one is oh-so-saucy.

Meatloaf Sandwich

  • 1 recipe Meatloaf
  • 1 recipe Meatloaf Glaze
  • 1 loaf of French bread, cut into thick slices
  • 1 cup sharp white cheddar cheese, thinly sliced
  • 1 bunch fresh cilantro, chopped
  • 1 red onion, thinly sliced (optional)
  • Lettuce (optional)
  • Leftover glaze

Butter both sides of as many slices as you will need and slice the amount of cheese you would like while the meatloaf and sauce finish baking.

Turn oven broiler on. Place bread slices on a sheet pan and toast under the broiler until light golden brown.

Flip all the pieces of bread over. Place cheese on half of the slices. Allow them to toast until the buttered ones are light golden brown and the ones with cheese are melted to your liking.

Remove bread from the oven, sprinkle melted cheese slices with cilantro. Top each with a slice of meatloaf and add buttered toast on top. Add more glaze if you like or use glaze as a dip.

Meatloaf

Preheat oven to 350°F.

  • 2 1/2 pounds 80/20 ground beef, chicken, or turkey (or a combination)
  • 1/2 sweet onion, minced
  • 1 cup plain panko breadcrumbs or crushed soda crackers
  • 16 ounces sharp white cheddar cheese
  • 2 teaspoons sea salt
  • 2 teaspoons coarse ground pepper
  • 1 tablespoon garlic powder
  • 2 teaspoon dried parsley
  • 1 teaspoon red pepper flakes (optional)
  • 1 1/2 teaspoons ground basil
  • 1 1/2 teaspoons ground oregano
  • 1 teaspoon ground paprika (high-quality so it’s not too spicy or bitter)
  • 2 tablespoons Worcestershire sauce
  • 1 cup milk
  • 3 eggs, beaten

Place ground beef, onion, breadcrumbs, cheddar cheese, salt, pepper, seasonings into a large bowl and set aside. Place Worcestershire sauce, milk, and eggs into a medium bowl and whisk together well. Pour the liquid ingredients into the hamburger bowl.

Use your hands to gently incorporate all ingredients together. Mix just until combined together evenly. If you overmix it, the meatloaf will be tough.

Place meatloaf into a large bread pan. Put the bread pan onto a half-sheet pan so that when the juices & sauce overflow, they can safely fall into the large pan. While meatloaf bakes, make the glaze and set it aside.

Bake for about 1 hour and then spread about 1 cup of the glaze over the meatloaf. Place the remaining sauce into a small oven-safe baking dish. Place the dish of sauce on the same baking sheet as the meatloaf pan and place everything back in the oven for another 30 minutes or until the middle of it reaches 160°F.

Meatloaf Glaze

  • 1/3 cup ketchup
  • 1/3 cup barbecue sauce
  • 1/3 cup tomato paste
  • 1/3 cup balsamic vinegar
  • 1/4 cup molasses
  • 1/2 cup brown sugar, packed
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon coarse ground pepper

Whisk all ingredients together.
