How to Make Strawberry Glaze

You can make your own from scratch – no jams or jello mixes are needed!

How to Make Strawberry Glaze

  • 1 pound strawberries, rinsed, stemmed & cored, and cut into slices
  • 1 teaspoon fresh lemon juice
  • 3/4 cup cold water (add 1/4 cup more if needed)
  • 3/4 cup sugar
  • 2 tablespoons cornstarch

Place a the strawberries, lemon juice, water, and sugar into a bowl. Stir and let sit for at least 20 minutes so the sugar can draw the juices from the strawberries.

Drain the juices from the strawberries into a saucepan.

Whisk cornstarch into the juices until the lumps are gone. Place over medium-high or high heat (watch closely) and bring to a boil. Continue to whisk and remove from heat after it has thickened.

Allow the glaze to cool completely so it doesn’t cook your strawberries.

Stir cooled glaze back into the strawberries.

This glaze is perfect over yogurt, pancakes, shortcakes, cheesecake, pound cake, or on top of a Strawberry Pudding Tart. You’re welcome.

  1. As I followed the directions I put all into saucepan. I thought weird that cornstarch goes in at that point. As I continued reading directions I saw it was to be put in later.
    I hope this doesn’t ruin my glaze. Ugh. Maybe note all but the cornstarch!
    Will let you know if that way still turns out. I’m thinking it might thicken a little and then strawberries won’t be easily drained.
