Place flour in a mixing bowl. Make a divot in the middle of the flour and place eggs in the divot. Place mixing bowl onto the mixer and, using the beater attachment, mix on speed 3 until the dough comes together.

Lock mixer lever and increase speed to 6 and let the mixer kneed the dough for you for about 6-8 minutes. When it’s done, you should be able to touch the dough and have it spring back a bit. It will look pretty smooth as well.

Mix for a few more minutes, then form into a ball. Drizzle a small amount of olive oil on a piece of plastic wrap and wrap your dough ball in it. Allow the dough to rest for about 30 minutes.

How to Make Homemade Pasta With a KitchenAid Mixer Attachment

Next, break the dough ball in half, dust with a bit of flour, and roll out to about an inch thick. Pinch the end so the Pasta Attachment for KitchenAid Mixer will be able to grab the dough.

Attach pasta sheet attachment to KitchenAid mixer and roll dough through on the lowest widest setting – #1. Fold the sheet in half, press together,  and put it through again. Continue doing this and placing through attachment, adjusting the width to a higher number each time until the pasta is the size you would like it to be. For my spaghetti, I go up to the #3 setting and put it through each setting a couple of times.

If pasta strips get longer than you’d like as they thin out, you can cut the sheet in half. I recommend keeping your pasta sheets no longer than about eight inches and laying them on a parchment-lined half sheet pan so they never stick together.

Then we switch over to the spaghetti attachment. Coat pasta with a light dusting of flour occasionally so it doesn’t stick together when you fold it or when it becomes noodles. Run each of the thinned sheets through the spaghetti attachment and coat with a little flour so they don’t stick together. I like to hang them on my pasta rack so they’re less likely to clump together, or you can lay them on the sheet pan again. Just be sure they aren’t touching one another while they wait to be cooked.

When spaghetti noodles are ready, set aside and bring a large pot of 4-5 quarts of water to a boil. Add about one tablespoon of sea salt to the water. Add noodles and boil for about 3-4 minutes. Try a noodle o make sure it is cooked. Drain right after cooking. Place them in a bowl and coat them with some olive oil.

Spaghetti night just became a fun family tradition of making your own noodles. Yay!

Note: Of course, this pasta can be made by hand as well. Just stir the dough together, knead the dough by hand, roll out as thin as possible, and cut thin strips with a sharp knife or pizza cutter.
