Some things are completely unnecessary, you know, like French Toast Cubes With Cream Cheese Filling & Triple Berry Sauce. Yet, they are glorious and scrumptious so we simply must splurge.

French Toast Cubes With Cream Cheese Filling & Triple Berry Sauce

Triple Berry Sauce

  • 4 cups mixed fresh berries
  • 2 cups sugar
  • Juice from 1/2 fresh lemon
  • 1/2 cup bourbon (or water)
  • 4 tablespoons cornstarch

Place berries in a medium bowl. If using strawberries, cut them into small pieces. This time I used strawberries, blueberries, and raspberries.  My favorite to mix in though is normally blackberries. They are so purply and divine.

Add sugar, lemon juice, and bourbon.

Give a stir and allow to sit for at least half an hour.

After berries have had time to rest, place in a saucepan.

While cold, stir in cornstarch until well-mixed.

Turn onto medium-high heat while continually stirring. Watch for filling to boil and keep stirring until thickened. Keep warm and set aside.

Sweet Cream Cheese Filling

  • 8 ounces cream cheese, room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice

Combine filling ingredients and mix until smooth. Place filling inside a decorating bag with a metal (or plastic) decorating tube. Set aside.

French Toast Cubes

  • Two loaves French bread
  • 6 eggs
  • 1 1/2 cups milk
  • 1 tablespoon vanilla extract
  • 1 tablespoon cinnamon

Slice bread into about 2 1/2 inch slices. Trim the edges off the slices to create square cubes. Place the bread pieces that are not used for this recipe into a Ziploc bag to save them. All of the leftover ingredients from this dish can be made into bread pudding so, no worries, there shall be no waste.

Whisk the eggs, milk, vanilla, and cinnamon, together in a medium bowl.

Use a butter knife to create a small hole in one side of each cube. Move the knife around in the middle of each to create room for the filling. Squirt a tablespoon or two of cream cheese filling into each cube. When finished filling all of the cubes, coat each cube quickly on all sides in the egg mixture.

Preheat the skillet over medium heat. Melt a couple of tablespoons of butter in the pan. When butter is finished melting, place 4 to 6 cubes in the pan to cook. Cook for 2-3 minutes on every side. Continue this process until all French toast cubes are cooked.

Place French toast cubes on plates, top with some triple berry sauce, and, if desired, a swirl of cream cheese filling & a fresh berry.

Replace the cherry filling with this Triple Berry Sauce and you can use all the leftovers from this recipe for this bread pudding. For although we splurge, we splurge responsibly.  Amen.
