French-Cut Green Beans

French-Cut Green Beans – a side dish worthy of a pretty plate… even though the plate won’t be needed for long.

Here’s how you can make your own French-cut green beans at home.

French-Cut Green Beans

Makes 4-6 servings.

  • 1 pound fresh green beans
  • 6 tablespoons olive oil, divided
  • 4 – 8 oz diced pancetta cubetti
  • 1 medium yellow onion, diced
  • 6 cloves fresh garlic, minced
  • 2 tablespoons fresh lemon juice
  • Sea salt
  • Coarse ground pepper
  • 6 sprigs of thyme leaves removed from the stems
  • 4 ounces parmesan cheese, shaved

Trim the ends off the green beans and then cut them into 2-inch pieces. Place the slicing blade set up on your food processor. Lay the beans flat in the processor shoot so they are sliced the long way. Once all the beans are cut, set aside.

Heat 1 tablespoon of olive oil in a large frying pan over medium-high heat. Add pancetta cubetti. After pancetta is cooked, remove it from the pan and set it aside.

Add the remaining 5 tablespoons of olive oil and the onions to the pan. Cook onions until they’re translucent. Add the garlic and cook for a couple more minutes

Add the beans and drizzle with lemon juice. Cook for a few minutes. Add salt & pepper to your liking. Stir in the thyme.

Place the beans on a pretty serving plate. Top with the pancetta and some shaved parmesan cheese.

If you’d rather, you can top with freshly cooked bacon bits instead of pancetta.

For a vegan option, use vegan cheese and omit the pancetta.
