Daisy Egg in a Hole is fun to make and extra special.

Use fresh basil leaves to decorate your flowery breakfast.

Daisy Egg in a Hole

  • 4 tablespoons butter
  • 2 slices white bread or Texas toast bread
  • 2 eggs, room temperature
  • Sea salt
  • Fresh basil leaves
  • 1 small tomato, diced (optional)

Tip: Letting the eggs set out for an hour or two to reach room temperature will help them cook along with the toast. Cold eggs will make it more likely the toast will burn before the eggs are done. Another way to warm them up which is quicker is to let them sit in warm water for awhile.

Melt the butter in a large frying pan over medium-low to medium heat.

Using a daisy cookie cutter that will fit your bread slices, cut a daisy shape out of each slice. If you don’t have one, a circle will do just fine.

While the butter melts, crack each egg into a small dish.

When the butter has melted, place all of the bread pieces into the frying pan to toast the first sides. When they are light golden brown, flip them over.

Right away, scoop an egg yolk carefully with your hand. Pour just the egg white into the hole in your toast. Then place the egg yolk on top of the egg white. This is especially perfect when use a daisy cookie cutter to be sure the yolk is in the center and looks like a flower.

When both eggs are in place, place a lid over the pan.

Cook until the egg whites are cooked and the yolks are set.

Not a soft egg lover? That’s okay. If you’d like the egg yolks hard, you can poke them or just flip to cook them more.

If you like, place basil leaves around your Daisy Egg in the Hole and top with the diced tomato.
