Christmas Broccoli Salad

This fresh & crispy Christmas Broccoli Salad is a great way to enjoy fruits & veggies that aren’t from a can, drenched in heavy sauces, or overcooked this Christmas. What a gorgeous addition to your Christmas dinner table.

Christmas Broccoli Salad

  • 1 pound fresh broccoli, chopped
  • 4 ounces pomegranate (replace with raspberries or another Keto-friendly option for Keto or Paleo)
  • 4 mandarin oranges (replace with grapefruit or another Keto-friendly option for Keto or Paleo)
  • 1 cup sunflower seeds
  • 1 recipe Asian Vinegarette Dressing (below)

Toss all ingredients and dressing together.

A fresh and delightful treat as a side salad or main dish.

Asian Vinegarette Dressing

  • 5 tablespoons red wine vinegar
  • 1/2 cup sugar (use Swerve or another Keto-friendly option for Keto or Paleo)
  • 1 teaspoon sesame oil
  • 2 tablespoons soy sauce
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon coarse pepper

Place all ingredients in a jar with a lid and shake until emulsified.
