Chopped Pizza Salad. What could be a healthier way to eat a family favorite like pizza than out of a salad bowl?
I can’t make any promises that it will become a replacement but I can tell you that we’ve been eating a whole lot more salad at our house since I created this recipe!
Chopped Pizza Salad
(Leave croutons off for gluten-free, Paleo, or Keto-friendly options)
- 1-pint mini tomatoes, cut in half
- 1/2 medium sweet onion, grated or minced
- 3 cloves fresh garlic, minced
- 4 sprigs fresh basil, chiffonade
- 4 sprigs fresh oregano, stemmed
- 1/4 cup olive oil
- 1 cup large bacon bits
- 16 ounces mini pepperoni (or chopped regular size pepperoni)
- 2-3 ounce can of black olives, sliced or chopped
- 8 ounces mozzarella cheese, grated
- 1 cup buttermilk ranch dressing
- 1/2 teaspoon coarse ground pepper
- 1/4 teaspoon sea salt
- 1 head romaine lettuce, chopped
- 1 cup garlic croutons (optional)
- Your favorite pizza toppings
You can vary the ingredients a lot to your liking but here are the measurements we use for our pizza salad.
Place all ingredients in a large bowl. Add the lettuce and croutons right before it’s time to serve and toss until coated with dressing.
