Chocolate Pizzelle Italian Waffle Cookies are fun to make and the prettiest little things you’ve ever seen. Nevermind the hours of cookie decorating when you can just bake the pretty right into your cookie in less than two minutes. Fill with frosting and lace with edible gold flakes and you have a magical treat everyone will adore.

Chocolate Pizzelle Italian Waffle Cookies

  • 3 large eggs
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 1/4 cups flour
  • 1/4 cup dark cocoa powder
  • 1 teaspoon baking powder
  • 3/4 teaspoon sea salt
  • 1/2 cup unsalted butter, melted
  • Powdered sugar (optional)
  • Chocolate frosting (recipe below, optional)
  • Edible gold flakes (optional)

Whisk together the eggs, sugar, salt, and vanilla until well beaten.

Sift together and then whisk in the flour, cocoa powder, baking powder, & salt. Whisk until smooth.

Add the melted butter, again whisking until smooth; the batter will be thick and soft.

Heat your Pizzelle Maker. Grease it as directed in the manufacturer’s instructions. As the iron heats, the batter will stiffen.

Cook the pizzelle according to the instructions that came with your iron. They’ll take between 45 seconds and 2 1/2 minutes to brown.

Remove the pizzelle from the Pizzelle Maker, and cool on a rack. If desired, use a pair of scissors to trim any ragged edges.

Dust cooled pizzelle with confectioners’ sugar or fill two with chocolate frosting (recipe below) in the middle if desired.

Chocolate Frosting

  • 2 tablespoons unsalted butter
  • 1/2 cup semi-sweet chocolate chips
  • 3 tablespoons hot water
  • 1 1/2 cups powdered sugar
  • 1/2 teaspoon sea salt

Melt butter in a medium saucepan over low heat. Stir in chocolate chips and continue to stir while they melt. Stir in hot water. After they are well-combined and saucy, remove from heat and stir in powdered sugar and salt.
