Chilled Strawberry Soup

This sexy Chilled Strawberry Soup Recipe is perfect for the strawberry season but can be enjoyed all year with readily available frozen strawberries. Once I served it to my B&B guests, it became a most-requested treat.

Chilled Strawberry Soup

Makes about six 8-ounce servings.

  • 4 cups fresh strawberries, frozen
  • 1/4 cup sugar
  • 1 cups apple or apple cherry juice
  • 1/4 cup balsamic vinegar
  • 18 ounces vanilla yogurt, divided
  • 6 fresh strawberries, optional for garnish
  • 6 sprigs of fresh mint, optional for garnish

Place strawberries in the blender with sugar, apple cherry juice, and balsamic vinegar.

Blend ingredients slowly at first then turn the speed up until they are smooth.

Pour into a pitcher or bowl and whisk in 12 ounces of the yogurt.

Clear bowls were created for this beautiful, chilled soup.

To serve, adorn with a spiral of yogurt from the remaining 6 ounces and a strawberry or a sprig of mint. She is lovely, isn’t she?

More casual: Psst. Don’t tell anyone, but this soup doubles as a delicious smoothie – just serve in a tall glass.

More fancy pants: You can zhoosh this recipe up by replacing a portion of the juice with some Riesling and serving in little glasses for parties. During the off-season, just replace chilled strawberries with frozen strawberries.
