Applesauce Spice Cake

  • 2 cups sugar
  • 1 cup unsalted butter, softened
  • 4 eggs
  • 1 cup applesauce
  • 1 tablespoon baking powder
  • 1 1/2 teaspoon salt
  • 2 1/2 cups flour
  • 1 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cardamon
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon ginger
  • One .74 ounce (or single serving size) package dry spiced apple cider mix

Preheat oven to 350°F. Cream together sugar and butter. Add the remaining ingredients and mix well. Spray two 8 inch round cake pans or one 9X13 baking pan well with baking spray. Bake for about 30-40 minutes or until a fork poked into the middle comes out clean.

Buttery Cream Cheese Frosting

  • 8 ounces cream cheese
  • 8 ounces unsalted butter
  • 1 1/2 teaspoons sea salt
  • 2 pounds powdered sugar
  • 1 teaspoon fresh lemon juice

Mix cream cheese, butter, and salt together on a high setting until they’re light & fluffy. This might take a couple of minutes. Add powdered sugar and mix on the lowest setting so it doesn’t fly out of the bowl. Add lemon juice. Turn up speed and whip for a couple more minutes.

After the cake has cooled completely cooled, frost cake.

For an easier time frosting, wrap the cake after cooled and place it in the freezer overnight. Frost the next day while the cake is still frozen and allow for defrost time before serving.

Let the leaves fall as they may.
