I don’t know how it happened. I decided to check it out but was full of doubt. I turned on the TV, watched the first episode, and I’ll be darned if, as a result, I didn’t sit there bawling my eyes out. Due to this, any emotional constipation I may have been suffering from before watching was gone and I quickly become a fan.

And since I’m not alone, I’m sure there is someone out there who needs a This Is Us – themed recipe for their loved one who will be celebrating their birthday soon. Have a co-worker who can’t stop talking about it? Got a Facebook friend who posts about how much they cried over this week’s episode… every… single…. week? Yeah, that person. Since they need this muffin, let’s get started.

"This Is Us" Birthday Banana Muffin with Twinkie Frosting

This Is Us Birthday Banana Muffin with Twinkie Frosting

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed bananas (about 3 bananas)
  • 2 teaspoons fresh lemon juice
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup chopped walnuts

Preheat oven to 350 degrees. Cream together shortening and sugar. Add eggs, bananas, fresh lemon juice, flour, baking soda, salt, chopped walnuts. Mix well. Place in large muffin tins with liners. This recipe will make 10 large muffins (or 20 regular size). Bake for about 35 or until tops of muffins is light golden brown and springs back when touched. Either that, or you can poke it with a fork and if it comes out clean, they’re done.

Twinkie Filling Frosting

  • 1 cup milk
  • 4 tablespoons flour
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla

Whisk milk & flour together in a saucepan. Place over medium-high heat and watch closely. Continue whisking until thick. Cook for about one minute while whisking. Remove from heat and set aside to cool for about 15 minutes.

Place butter & sugar in mixer on high speed until light & fluffy. After flour & milk mixture has cooled to room temp (important), add to mixer and whip until light & fluffy. It should look almost like whipped cream or, you know, Twinkie filling.

Note: For a rather white filling you can substitute butter with white shortening. Because shortening just won’t taste nearly as lovely.

Don’t forget the sprinkles and the candle… since your friend may get emotional.

Emergency Chocolate Cupcakes With Cream Cheese Frosting

I am so proud of my kids. Most importantly, I’m proud of who they have worked hard to become. But I am also proud of their accomplishments. There are too many to list; but, last night I received a typical call from Dotter getting ready to accomplish something once again. It went something like this…

5:38pm call: “Hi, Mom. I’m at the grocery store…”


And, that’s when I know I need to put my chef hat on to answer cooking or baking questions. There will be messaging, grocery lists, and mom tips involved. Dotter uses this website just like you do except, you know, she has the hotline number. This week she was making cupcakes for some nurses. We got her all set and then the updates came…

If she’s anything like her momma, I’m guessing there was dancing and bouncing and clapping involved. We’re a little Tiggerish that way. One day perhaps she, too, will break her dotter’s bed while sharing good news. I love her.

Cake Ingredients

  • 2 cups sugar
  • 1/4 cup butter, softened
  • 2 3/4 cups flour
  • 1/4 cup dark cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla
  • 1 cup hot water

Cream sugar & butter together. Mix in dry ingredients. Place eggs, buttermilk, vegetable oil, butter, & vanilla in a medium bowl and mix together well. Pour wet ingredients into mixture and continue to mix. Add hot water. Turn mixer off and use a rubber spatula to scrape ingredients from sides of bowl down into batter. Mix some more until well combined. Set aside.

  • Scoop batter using an ice cream scoop or 1/3 measuring cup into cupcake liners placed in a muffin baking pan.Bake for about 20-25 minutes or until a fork poked in comes out clean.Allow cupcakes to cool completely.

Cream Cheese Frosting Ingredients

  • 1 – 4 oz pkg cream cheese, room temperture
  • 1 stick unsalted butter, room temperature
  • 1 lb powdered sugar
  • Sea salt to taste – this make a huge difference in the flavor
  • Teenie tiny bit of water at a time if needed

Start mixer on low until ingredients are combined then whip ingredients together. Add a wee bit of water only if needed.

You can use 1/4 or 1/2 batch of this fondant for decorations.

How to Make Hamburger Cupcakes

I had a dream.

My head was swirling with cutie ideas the day before my summer treats segment on New Day Northwest. I had envisioned a mini grill with hamburger cupcakes on it. The vision was so adorable, I couldn’t even. But when I arrived at the studio and my morning show to-dos were listed to me, I realized I would be short on time to put together the new mini grill before the first commercial. My display. Without the mini grill. This couldn’t be. And then I remembered….

These ladies. These ladies have had my back since I was a little girl. They’ve known me for 40 years and longer. Every girl needs ladies like these. When I suddenly found myself in the midst of my father passing away from cancer, my husband walking out with someone else, my brother dying suddenly from a heart attack, someone stealing $30,000.00 from my handicapped sister and more from my elderly parents, my award-winning B&B shut down, my home gone, and no car – all within a year’s time… well, these are the ladies who held me while I cried. There are more where they came from too – a whole hilarious, fun-loving church full. I don’t know where I would be without their humor, their encouragement, their love of God, and their ability to put together mini-grills while using their finger nails as screw drivers.

They said it took all five of them to complete the task. There may have been a whole bag full of screws at the bottom of the box but the cupcakes were displayed perfectly and the grill held together because of these ladies. I am held together because of these ladies. Never underestimate the importance of an adorable display, five freshly manicured women, and a true sense of community.

Mini Hamburger Cupcakes

  • 2 boxes yellow cake mix
  • 3 tablespoons sesame seeds
  • 1 box brownie mix
  • 1 container of vanilla frosting

Prepare cake mix according to box instructions. Divide cake mix into muffin pans sprayed with non-stick baking spray (do not use cupcake liners).  Makes about 9 large cupcakes or 16 regular-sized cupcakes.

Prepare brownie mix according to box instructions. Bake in 9X13 pan.

When a fork poked into cupcakes comes out clean, remove from oven and allow to cool completely.

After brownies are baked according to box instructions, allow to cool for about 10 minutes then use a circle cookie cutter to cut out brownie burgers that will fit well with your hamburger-bun cupcakes.

Cut cupcakes in half like a hamburger bun. Place a brownie burger on the bottom half of each cupcake.

Divide frosting into 2-3 dishes. Colors you might like to use would be orange for cheese, green for lettuce, and red for ketchup. Place top of cupcake on brownie.

If preparing in advance, you can keep on a cookie sheet in fridge to keep cool for a nice summer treat.

Vanilla Cupcakes With Pink Cream Cheese Frosting

Because I’m really into Valentine’s Day. Because the Seahawks lost and I’ve moved on. Because I’m a fair-weather fan. And because I hadn’t posted a plain vanilla cupcake recipe yet, here they are. Da da da da! Cupcakes more gorgeous than cotton candy and frosting more delightful than almost anything else on the planet earth.

Preheat oven to 350F.

VANILLA CUPCAKES RECIPE:

  • 2 cups sugar
  • 1/4 cup butter, softened
  • 3 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla
  • 1 cup hot water

Place dry ingredients into mixer. Place eggs, buttermilk, oil, butter, and vanilla in a container and beat together well. Mix beaten wet ingredients with dry ingredients. Mix in cup of hot water on low speed.  Scrape down edges of bowl to be sure to incorporate all ingredients into batter. Mix on medium speed for a couple minutes.

Scoop batter using an ice cream scoop into cupcake liners placed in a muffin baking pan.

Bake for about 20-25 minutes or until a fork poked in comes out clean.

Allow cupcakes to cool completely. Makes about 18 cupcakes.

PINK CREAM CHEESE FROSTING RECIPE:

  • 8 ounces cream cheese, room temperature
  • 1 cup unsalted butter,  room temperature
  • 2 pounds powdered sugar
  • 1 T. fresh lemon juice
  • 1 teaspoon sea salt
  • 2 tablespoons water (if needed for creamier frosting)
  • Smidge of pink food coloring

Whip cream cheese, butter, confectioner’s sugar together on low speed until forms into a creamy, dreamy frosting. Add lemon juice & salt. Add water if needed. Starting small, add enough pink food coloring to reach desired shade of pink frosting. Using decorating bag and desired decorating tip, frost cupcakes.

Red Velvet Cupcakes With Cream Cheese Frosting Recipe

Have you ever eaten dessert first? If you try these lovelies, I’m pretty sure you will decide to do just that. They are as pretty as they are delicious. Let’s get started right away.

Cupcake Ingredients

  • 2 cups sugar
  • 1/4 cup butter, softened

Cream together cream cheese and butter. Slowly mix in powdered sugar & salt.

This recipe will create about 18 lovely cupcakes for your event.

Unless I’m helping you bake. Then it makes 17.

How to Make Marshmallow Fondant Recipe

I’ll never forget Dotter’s Sweet 16 Birthday. We’ve thrown some fun shindigs but this one was special. T-shirts were made. Fun was had. And, the cake, well, the cake was pretty darn glorious.

Decorating cakes isn’t really my thing but every once and awhile I like to make sure the skills mom taught me are still in tact. And now that fondant cakes are a favorite, I decided I’d start making my own. And, of course, I choose the easy way – marshmallow fondant. This recipe is better tasting and easier to work with than pre-made stuff, too.

It’s always fun trying to create a masterpiece behind the birthday girl’s back.

Ingredients

  • 16 ounces white mini-marshmallows (use a good quality brand)
  • 2 pounds powdered sugar
  • 3 to 5 tablespoons water
  • Flavoring extract (optional)
  • Food coloring
  • 1/2 cup Crisco shortening (for hands)

Place marshmallows into a large, microwaveable bowl. Microwave about 30 seconds at a time then stirring and repeating until melted. Stir in powdered sugar. Add water a little at a time as needed. Use hands to knead fondant but be careful. it might be hot in places for awhile. The shortening is to keep the fondant from sticking to your hands.

Split fondant into sections according to how many colors you will need. Knead food coloring into each.

For chocolate, you can add some sifted, dark chocolate cocoa powder to your fondant with a little more water. Knead. Knead. Knead.

Roll out fondant as you like for your project. Great for cookies, cupcakes, cakes… and, of course, giant cupcakes.
