I often forget about peanut butter cookies… so plain, so ordinary. But, then I have a hot-out-of-the-oven peanut butter cookie again and oh the joy that fills my soul.
Preheat oven to 350°F.
- 1/2 cup sugar (plus more for stamping cookies)
- 1/2 cup brown sugar
- 3/4 cup peanut butter
- 1/4 cup unsalted butter
- 1 egg
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1 teaspoon sea salt
- 1 1/4 cup flour
Cream sugar, brown sugar, and butter together. Add remaining ingredients and mix until combined.
Using small cookie scoop, place balls of dough on baking sheet covered in parchment paper. Leave a few inches in between each dough ball.
Dip a fork in sugar and then stamp down on each cookie twice, making the shape of a cross.
Bake for about 10-12 minutes.
Everyone needs an outstanding (and delightfully ordinary) peanut butter cookie recipe.
