Dear friend, Have you met my friend, Speculaas? You surely must.
Speculaas, she is spicy and sassy and exceptionally gorgeous.
Cream together
- 1 1/2 cups butter
- 1 1/2 cups brown sugar
Add remaining ingredients and mix together well:
- 1 1/2 teaspoon salt
- 1 teaspoon of vanilla
- 1 egg
- 1/2 teaspoon baking powder
- 3 1/2 cups flour
- 2 tablespoons cinnamon
- 1 tablespoon ginger
- 1 tablespoon cloves
- 1 teaspoons mace
- 1 teaspoons nutmeg
- 2 teaspoons cardamom
- 1 1/2 teaspoons white pepper
Cover dough with plastic wrap and refrigerate for about an hour.
After chilled, roll out onto a floured surface. Preheat oven to 350F.
Roll with regular rolling pin to about 1/4 inch thick, then roll over with a speculaas rolling pin if you like.
Then using cookie cutters cut out basic shapes.
Oh so pretty.
Squares, perhaps? I think yes.
Brush cookies lightly with a beaten egg for a little bit of shine. Bake cookies for about 15-20 minutes.
I could roll and roll and roll… happy girl.
Indeed, I promise you will be dear friends forever and ever.
Recipe makes about 2 dozen gorgeous spicy cookies.

Hi,
I was scouring the web for speculoos recipes when I fortunately stumbled upon your blog. I love your cookie roller design! I just bought all materials I need to start making dutch speculaas however I don’t have the cookie roller. Where could I get one of those pretty dainty rollers? Thank you!
Regards,
Isa
