Today we are having fun making another mini football season snack. Mini insalata caprese kabobs are healthy and easy capresey to make which stacks up to a fun treat!

After you slice the cheese – notice how politely I said that? – then cut the cheese – oops, there goes polite – into four pieces – and excuse yourself. Sorry, I just couldn’t resist. How mature am I today?
Slice tomatoes (about 1 1/2 inches around) into three sections from top to bottom – or from bottom to top!
When you are ready to kabob, take one bamboo fork…
…and place the bottom of the tomato on like this. This will be the top of the kabob. The bottom of the tomato is prettiest and the top will make a more stable bottom for the kabob when it stands up on the serving plate.
Next, add a quarter of a slice of mozzarella.
We’re on a roll now! A fresh basil leaf… middle of tomato… mozzarella… and finally the top slice of tomato.
Next, stir together about 1/2 cup of olive oil, 1/4 cup of balsamic vinegar (optional), kosher salt and freshly ground pepper.
Allow the kabobs to take a dip in the dressing. Single file gang! Swoosh them around a little to keep the vinegar and oil together and so that you cover the whole kabob
After dipping, place the kabobs on a pretty plate (gently pushing down the kabob makings) and for a little added flavor give them another quick dusting of freshly ground pepper. Gorgeous, fun to eat and healthy!
